Green Enchiladas

I make this recipe for church socials all the time. Everybody raves about it and always asks for the recipe! It freezes well and can be enjoyed as leftovers.

1 onion, chopped

2 to 3 t. oil

2 lbs. ground beef

1-1/2 t. salt

1-1/2 t. pepper

14-1/2 oz. can diced tomatoes with green chiles

4-oz. can chopped green chiles

10-3/4 oz. can cream of chicken soup

12-oz. can evaporated milk

5-oz. can evaporated milk

10 6-inch corn tortillas, torn into pieces and divided

8-oz. pkg. shredded Cheddar cheese, divided

In a large skillet over medium heat, sauté onion in oil until translucent. Add beef and cook until browned. Drain; season with salt and pepper. Meanwhile, in a large bowl, mix together tomatoes with juice, chiles, chicken soup and both cans of evaporated milk; stir well and set aside. Spray a deep 13"x9" baking pan with non-stick vegetable spray. Layer half of tortilla pieces in pan; top with half each of beef mixture, tomato mixture and cheese. Repeat layering, ending with cheese. Bake, uncovered, at 350 degrees for about one hour, until hot and bubbly. Makes 10 to 12 servings.
